Ranger if you want the "simplest" class without too many gimmicks on a surface level. However endgame DPS rotations can be a bit high-APM. Guardian if you want the best "overall" class, which has both DPS and Support roles, and lots of defenses.
The best class for dual pistols from level 1-80 with power gear is likely to be thief. It's good for the core game where single enemies die quickly, and you can just use the Unload skill (#3) to mow them down. It's fun, but gets repetitive. The only other option for dual pistols is engineer, but the main hand pistol is very condition damage
Tank guardians aren't used for the most part in pve. If you want a class that is good in support and healing then pick the druid. That one is right now the first pick since it has strong heals, strong dps buffs for your group and can mostly play with offensive berserker gear. 4. SinZerius.
They probably will in one capacity or another. To be honest every class seems to have a decent mix of complicated and uncomplicated classes. There's the Ele Piano meme but Catalyst is far less crazy than other eles from what I'm hearing from friends (though they are bias'd).
Ele is the best 1v1 class, then it's followed by harb which is Necro. Willbinder which is guardian is also very good. Ranger has a few good specs the best really being southeast. If you are planning to try to win outnumbered fights you need high burst so classes like willbinder ranger and thief to some degree is the ones you want to pick.
Asura seems best, going by the Thaumanova fractal morph. Hundred Blades take 3.5 seconds, with Quickness its half that. So outside of that beautiful timeframe I would have to spend my time as a talking rat with melon for a head which isn't worth it. Also female Charr Hundred Blades is not too shabby at all I must say.
Staff #3 makes it very easy to tank and staff 5 destroys breakbars. Can also bring a shield offhand for even more blocks. To give you some insight, it's not raids but in KO CM, most pug groups have HFB "kite" the sniper hits (aka tank the hits) since it's better/easier to surviving those over HAM.
Being tanky in GW2 means having high base HP. So "Necromancer" and "Warrior" are good options. Honestly, though, if you're eating dust in sub-80 maps it's probably a consequence of not leveling in the right areas or being under-geared.
All are extremely good in open world PvE. In PvP same issue. Lots of shields / sustain and good damage. For guardian FB is extremely meta in fractals / raids. Just high numbers basically. For PvP it’s not as strong as necro, just good. Just one class that needs to be nerfed in PvP atm and it’s necro. 5.
The best build by far that can use both longbow ans gs is dragonhunter, you simply use the meta build but swap sword/scepter and focus for longbow. It plays similar to how sword would but replace sword 3 with longbow 2 and 3. The dps loss compared to the normal scepter build is only about 2k.

Daredevil is by far the easiest thief specialization. Infinite dodges and amazing cleave ftw. I'd say Mirage is easiest for Mesmer because infinite dodge builds in PvE is just memes all the way down but I haven't dug enough into PvE Virtuoso to counter your argument.
Boons are timed effects in this game that temporarily buff you. Might increases your damage, Regeneration gives you healing over time, Aegis allows you to block the next attack, and so on. Classes like Revenant, Warrior, Guardian, Engineer, and Elementalist are great at giving a variety of boons to their allies.
Probably anything that gives itself quickness, crit cap/condi duration caps and bonus points for might. I think I’d put my money on a zerker reaper or vipers quick brand as highest dps.
